Food for thought: You might reconsider how you are cooking your beets if you've ever fielded the comment, "they taste too earthy for me". Most cooks tend to purchase beets that have been harvested too long ago and that makes the beet have a hard outside layer difficult to peel. Soooo, they wash, slice and cook without peeling. Peel Nature's Gift thin skinned beets and put them in VERY little water (1/3 the height of the slices in the pan). Cook to desired softness - maybe 4 minutes.
Hmmm, that red beet juice packed with nutrients has to be good for something . . . creative thinking time:-) Just don't throw it out!
